I got to a point in Twilight Princess similar to the one depicted(No real spoilers, really), but I never quite figured out how to fish. I did the task in the beginning of the game by luck alone, and when I got here and realized I was fishing wrong(and that it was taking a very, very long time for anything to happen), I thought that maybe this scenario might make things go my way for once.

Try putting bait on the Coral Earring before throwing it in the water. When you see the bobber go all the way under, flick back with the Wii remote and start rotating the nunchuck to reel it in. Remember, it's in Zora's Domain by those two rocks jutting out of the water.
